A combination of whole bunch and destemmed fruit, wild yeast fermentation in 100% French oak on some juice solids. A very small portion of the barrels go through malo-lactic fermentation. Named after the owners of the land we purchased to form Pike & Joyce.
A generous and appealing core of ripe white peach fruit bursts onto the palate. Textural and moreish, the acid profile is perfectly balanced, leaving the mouthwatering for more. Hints of cashew and nougat linger for a complex and lengthy finish.
